What Molecular Gastronomy Actually Is

The term was coined in the late 1980s by physicist Nicholas Kurti and chemist Hervé This, who wanted a proper scientific discipline for studying what happens to food during cooking. It later became attached to a style of restaurant cooking — the foams, gels and spheres associated with elBulli and the chefs who trained there.
That association has made it sound like theatre, but the underlying idea is practical: if you understand the chemistry, you control the result. A chef who knows why a sauce splits can fix it. A chef who knows how a gelling agent sets can build a texture no traditional method produces.
It is not a replacement for classical technique. It is an extension of it — and the chefs who use it well are almost always classically trained first.

The Core Techniques

Each one solves a specific problem. Used without a reason, they become garnish — which is the most common criticism of the style.

A liquid is dropped into a setting bath so a thin gel membrane forms around the outside while the inside stays liquid — producing spheres that burst in the mouth. Basic spherification drops an alginate-containing liquid into calcium; reverse spherification does the opposite, for liquids that are acidic or contain calcium already.

Why it matters: it lets you serve a liquid as if it were solid, and control the exact moment a flavour is released.

Air is whipped or siphoned into a liquid stabilised with lecithin, gelatine or protein. A dense espuma comes from a siphon; a light air is closer to a bubble raft, made by aerating a thin, lecithin-stabilised liquid.

Why it matters: intense flavour with almost no weight. Useful when a sauce would overwhelm a delicate dish.

Different gelling agents behave very differently. Agar sets firm and tolerates heat. Gellan can be brittle or elastic depending on type. Gelatine melts at body temperature, which is why it feels different in the mouth.

Why it matters: choosing the right one is the whole skill. The same liquid can become a fluid gel, a firm cube or a hot gel that holds its shape on a warm plate.

Classical cooking already relies on emulsions — mayonnaise, hollandaise, beurre blanc. Molecular technique adds stabilisers such as lecithin and modern starches so emulsions hold longer, take more liquid, or survive heat that would normally break them.

Why it matters: this is the most directly useful technique for everyday professional kitchens, not just tasting menus.

Freezing something almost instantly produces much smaller ice crystals, so the texture is smoother than anything a conventional freezer achieves. It also allows the outside of an item to be frozen while the centre stays liquid.

Why it matters: speed of freezing, not just temperature, determines texture — a principle that applies right back to ordinary ice cream.

Cooking sealed food in a precisely controlled water bath means proteins are held at exactly the temperature at which they set correctly, and never above it. Egg yolk, fish and custards are the clearest beneficiaries.

Why it matters: it removes guesswork and makes results repeatable across a service — which is why it moved from avant-garde kitchens into mainstream ones.

Tapioca maltodextrin absorbs fat and turns it into a dry powder that melts back to liquid in the mouth. Olive oil, brown butter or chocolate can be served as a powder that reverts on contact.

Why it matters: it changes how a fat is delivered without changing its flavour.
